Cooking…

Ok, so as you have probably noticed by the lack of posting in the cooking section…

I am not good at it.

I can pull a meal together, but I don’t really enjoy it.

Maybe it has something to do with the two little ones under my feet….

Anyways…

I was wondering if any of you have a great recipe for cornbread…AND this might sound silly, but for the iced tea that you all drink in the states. Up here in Canada we drink the sweet version, but my husband LOVES the unsweetened kind and I would like to make him some!

I live deep in the south Texas we love cornbread and sweet tea its a must have but i am also mexican so I can throw down in the kitchen I love to cook wash dishes on the other hand not so much Cathryn have I have the recipe for you !!! Honey cornbread muffins mmmmmmmm they will have everyone smacking their lips n licking their fingertips thats for sure

    Ingredients:

    1 cup yellow cornmeal
    1 cup all-purpose flour
    1 tablespoon baking powder
    1/2 cup granulated sugar
    1 teaspoon salt
    1 cup whole milk
    2 large eggs
    1/2 stick butter, melted
    1/4 cup honey

    equipment: 12-cup muffin tin

    Directions:

    Preheat oven to 400 degrees F.

    Into a large bowl, mix the cornmeal, flour, baking powder, sugar, and salt. In another bowl, whisk together the whole milk, eggs, butter, and honey. Add the wet to the dry ingredients and stir until just mixed.

    Place muffin paper liners in a 12-cup muffin tin. Evenly divide the cornbread mixture into the papers. Bake for 15 minutes, until golden

    Enjoy oh the brand of tea we use down here is lipton or red diamond but were sweet tea drinkers and in the summer you should try sun tea I boil mine

  2. My family likes unsweetened ice tea as well and I have always used Luzianne Reg. or Decaf. family sized tea bags. 4 bags in 2 cups water, 4 minutes in microwave. I put a saucer on top after to steep (if I remember) or just come back to your microwave later and mix the concentrate with 6-8 cups water. I put water in pitcher first so the tea wont be foamy on top.
    You can also add or replace one bag with an Earl Grey (the small one). This tastes alot like Starbuck’s Black Tea. It has a little “bitter?” bite to it that is good with a slice of lime or lemon.

  3. A refreshing tea that we enjoy either hot or cold is homemade “Sun Tea”. To 6 cups of water add one tea bag of your choice (rooibos is a yummy de cafe choice) then place your pitcher out on the porch in the sun. Have it covered to make sure the dog and cat can’t get at it or any fly’s go for a swim. Leave it to steep until desired flavor, usually a 2-4 hours. Then pour over ice cubes and enjoy. The sweet version to this is a family favorite and just add 2/3 cup of lemon juice and 2/3 cup sugar stir and enjoy!

  4. I love cornbread and make several different recipes but here is a sweet recipe that I thought turned out pretty good!
    As for tea sweet enough to put a diabetic into a coma is what my husband says mine is but it is good without the sugar as well – I use Lipton iced tea bags (1 family size) and 2 cups of water, put in the microwave for 5 minutes, let stand for a few minutes than add enough water to fill up a 2 qt pitcher!
